Minestrone Soup

Method


  1. Heat oil in a large pan and add the garlic, onion, carrot, celery and potatoes and fry for 3-4 mins until onion begins to soften.
  2. Add stock and tomatoes, bring to the boil and simmer for 10 mins.
  3. Add pasta, cabbage and peas and continue to cook for a further 10 mins or until the pasta is cooked.
  4. Add the herbs, salt, sugar and give a good stir through.
  5. Serve in bowls with a grating of parmesan (or any cheese) and some black pepper to taste.

Ingredients

1 tbsp oil

2 cloves of garlic

1 large onion, chopped

1 large carrot, chopped

2 sticks celery, finely sliced

450g potatoes

1.5l veg stock

1 tin chopped tomatoes

125g pasta

200g shredded cabbage

100g frozen peas

1 tsp dried herbs

1 tsp salt

1 tsp sugar

grated parmesan & black pepper
