Minestrone Soup
Method
- Heat oil in a large pan and add the garlic, onion, carrot, celery and potatoes and fry for 3-4 mins until onion begins to soften.
- Add stock and tomatoes, bring to the boil and simmer for 10 mins.
- Add pasta, cabbage and peas and continue to cook for a further 10 mins or until the pasta is cooked.
- Add the herbs, salt, sugar and give a good stir through.
- Serve in bowls with a grating of parmesan (or any cheese) and some black pepper to taste.

1 tbsp oil
2 cloves of garlic
1 large onion, chopped
1 large carrot, chopped
2 sticks celery, finely sliced
450g potatoes
1.5l veg stock
1 tin chopped tomatoes
125g pasta
200g shredded cabbage
100g frozen peas
1 tsp dried herbs
1 tsp salt
1 tsp sugar
grated parmesan & black pepper
