Family Fish Pie
Method
Heat the oven to 200C/fan 180C/gas mark 6.
Put the potato chunks in a saucepan and pour over enough water to cover them. Bring them to the boil and then simmer until tender.
When cooked; drain thoroughly and mash with the splash of milk and knob of butter. Season with ground black pepper.
Put the butter, plain flour and milk into a separate pan and heat gently, stirring continuously with a balloon whisk if you have one. Cook for 3-4 mins until thickened.
Take off the heat and stir in the fish chunks, 1 tsp of mustard, peas, sweetcorn and chopped boiled egg (if using).
Pour into ovenproof dish and spoon the mashed potato on top, sprinkling with a handful of grated cheese.
Pop in the oven for 20-25 mins or until golden and bubbling at the edges. Alternatively cover and freeze for another time.

1kg potatoes peeled and cut into chunks
400ml milk, plus a splash
400g fish chunks
50g butter, plus a knob
50g plain flour
1tsp mustard
1 boiled egg, chopped (optional)
handful frozen sweetcorn
handful frozen peas
handful grated cheese
