Apple Blondies


  1. Beat together the melted butter, sugar and egg in a large bowl, until light and fluffy.
  2. Fold in the apples and walnuts (if using).
  3. In a separate bowl, add flour, salt, baking powder, bicarbonate of soda and cinnamon and run a hand whisk through (hack instead of sifting).
  4. Stir this ‘dry’ mix into the ‘wet’ mix, until just blended.
  5. Spread batter evenly in baking dish and bake in a preheated oven 180°C for 25 mins or until pale golden with the edges coming away from the sides of the tin.
  6. Serve as they are or with a scoop of ice cream. Delicious hot or cold!


120g butter, melted

150g sugar

1 egg, beaten

3 apples, peeled, cored & chopped into small chunks

75g walnuts, chopped

150g plain flour

¼ tsp salt

½ tsp baking powder

½ tsp bicarb of soda

1 tsp cinnamon
