(Sweet) Potato Curry

Method


  1. Heat the oil in a large saucepan and fry onion, pepper & ginger for about 5 mins.
  2. Stir in curry powder and allspice and cook for a minute before adding the coconut milk, tomatoes, can of water & stock cube.
  3. Add the mix of potatoes, season, then cover & bring to the boil. Simmer for 25 mins.
  4. Add in the frozen peas and cook for a further 5 mins,or until all veg is tender.

Ingredients

1 tbsp olive oil

1 onion, diced

1 red pepper, diced

small piece ginger, grated or ¼ tsp ground ginger

2 tbsp curry powder

1 tbsp allspice (or cinnamon, nutmeg or cloves)

400g tin chopped tomatoes

200ml coconut milk

800g potatoes (mix sweet/white)

1 stock cube

100g frozen peas
