Sausage & Sweet Potato Hash

Method


  1. Fry sausages in spoon of oil and remove from pan.
  2. Add remaining oil to pan along with sweet potato and a good pinch of salt. Cook for 5 mins, stirring occasionally.
  3. Add the diced apple, onion and herbs and season with black pepper, stir to combine.
  4. Cook for a further 5-8 mins or until veg is soft and starting to brown.
  5. Cut sausages into chunks and add back in to pan giving a good stir.
  6. Heat through for another couple of mins, then serve immediately.
  7. Try topping with a fried egg for a super supper!

Ingredients

6 sausages

2-3 tbsp oil

1 large sweet potato, diced

1 onion, diced

1 large apple, cored & diced

1 tsp dried herbs eg. thyme, oregano

salt & black pepper
