Sausage & Bean Stew
Method
- Heat the oil in a large saucepan. Add the sausages and fry for 5-6 mins until golden brown.
- Add in the onion, carrot or pepper and garlic and continue to fry until all the veg has started to soften.
- Pour in the stock, the tin of tomatoes and the tin of beans and slowly bring to the boil.
- Stir in the tomato puree, Worcestershire sauce and seasoning, then continue to simmer gently without a lid for 20 mins, stirring occasionally.
- Serve with crusty bread, baked potato or on a bed of mash.
Ingredients
1 tbsp vegetable oil
1 large onion, chopped
2 carrots or 1 pepper, sliced
1 garlic clove, crushed
6 sausages
1 tin chopped tomatoes
1 tin beans (butter/cannellini/kidney etc.)
2 tbsp tomato puree
1 tbsp Worcestershire sauce
250ml chicken stock
pinch of brown sugar, sea salt and black pepper to taste
