Sausage, Apple & Leek Pie
Method
- Boil potatoes for 10 mins or until tender. Drain and mash with the milk and seasoning.
- Heat the oil and fry the sausages until browned all over, remove and set aside.
- Add leeks to the pan with a splash of water and soften for 8-10 mins. Add the sliced apple and cook for 1 minute more.
- Stir in both the flour and mustard then pour over the stock and simmer for 2 mins to make a sauce.
- Chop sausages into chunks and stir into the pan.
- Tip everything into a large ovenproof dish, top with the mash & scatter over the grated cheese.
- Bake at 200°C (180°C fan) or gas mark 6 for 20 mins until golden.

900g potatoes, peeled & cut into 3cm chunks
2-3 tbsp milk
salt & pepper to season
1 tbsp oil
6 pork sausages
2 leeks, sliced
1 small eating apple, peeled & sliced
1 tbsp plain flour
1 tbsp grainy mustard
200ml stock
50g grated cheese
