Sausage, Apple & Leek Pie


  1. Boil potatoes for 10 mins or until tender. Drain and mash with the milk and seasoning.
  2. Heat the oil and fry the sausages until browned all over, remove and set aside.
  3. Add leeks to the pan with a splash of water and soften for 8-10 mins. Add the sliced apple and cook for 1 minute more.
  4. Stir in both the flour and mustard then pour over the stock and simmer for 2 mins to make a sauce.
  5. Chop sausages into chunks and stir into the pan.
  6. Tip everything into a large ovenproof dish, top with the mash & scatter over the grated cheese.
  7. Bake at 200°C (180°C fan) or gas mark 6 for 20 mins until golden.


900g potatoes, peeled & cut into 3cm chunks

2-3 tbsp milk

salt & pepper to season

1 tbsp oil

6 pork sausages

2 leeks, sliced

1 small eating apple, peeled & sliced

1 tbsp plain flour

1 tbsp grainy mustard

200ml stock

50g grated cheese
