Quiche Leekraine

Method


  1. Preheat oven to 180°c/gm 4.
  2. Melt butter in frying pan, add bacon and cook for a minute or two, until golden.
  3. Add leeks, season lightly then cover pan and cook on a low heat for 10 – 15 mins, stirring occasionally.
  4. Combine eggs, milk and grated cheese adding in bacon and leek mix once cooked.
  5. Line your dish with the pastry, pour the mixture in and bake for 25-30 mins until golden in colour.
  6. Serve with some potato wedges and baked beans.

Ingredients

300g leeks, sliced

25g butter

3 rashers streaky bacon, chopped

75g cheddar cheese, grated

3 eggs, whisked

250ml milk

roll of ready-made pastry
