Quiche Leekraine
Method
- Preheat oven to 180°c/gm 4.
- Melt butter in frying pan, add bacon and cook for a minute or two, until golden.
- Add leeks, season lightly then cover pan and cook on a low heat for 10 – 15 mins, stirring occasionally.
- Combine eggs, milk and grated cheese adding in bacon and leek mix once cooked.
- Line your dish with the pastry, pour the mixture in and bake for 25-30 mins until golden in colour.
- Serve with some potato wedges and baked beans.
Ingredients
300g leeks, sliced
25g butter
3 rashers streaky bacon, chopped
75g cheddar cheese, grated
3 eggs, whisked
250ml milk
roll of ready-made pastry
