Keema Curry

Method


  1. Heat the oil in a saucepan. Add the onion, garlic and fresh ginger (if using) and fry until soft.
  2. Add the mince and brown. Then add the curry powder (and dried ginger if not using fresh) and cook for a further minute.
  3. Add the beef stock, chopped tomatoes and ketchup and stir well. Simmer for 15 mins, stirring occasionally, until thickened.
  4. Three mins before the end of the cooking time, add the frozen peas.
  5. Serve on a bed of rice or couscous, in pitta breads or on top of a baked potato.

1 tbsp vegetable oil

1 onion, chopped

2 garlic cloves, crushed

1 inch piece of fresh ginger, grated or 1¼ tsps dried ginger

400g pack of beef mince

1 tbsp mild curry powder

1 tin chopped tomatoes

1 tbsp tomato ketchup

200ml beef stock

100g frozen garden peas
