Keema Curry
Method
- Heat the oil in a saucepan. Add the onion, garlic and fresh ginger (if using) and fry until soft.
- Add the mince and brown. Then add the curry powder (and dried ginger if not using fresh) and cook for a further minute.
- Add the beef stock, chopped tomatoes and ketchup and stir well. Simmer for 15 mins, stirring occasionally, until thickened.
- Three mins before the end of the cooking time, add the frozen peas.
- Serve on a bed of rice or couscous, in pitta breads or on top of a baked potato.

1 tbsp vegetable oil
1 onion, chopped
2 garlic cloves, crushed
1 inch piece of fresh ginger, grated or 1¼ tsps dried ginger
400g pack of beef mince
1 tbsp mild curry powder
1 tin chopped tomatoes
1 tbsp tomato ketchup
200ml beef stock
100g frozen garden peas
