Cowboy Hotpot


  1. Fry the onion, pepper and carrot/sweet potato gently in oil until softened but not browned.
  2. Add the green beans, baked beans, sweetcorn (whole tin, water included), tomato puree and BBQ seasoning. Bring to the boil and simmer for 5 mins. Check for seasoning.
  3. Transfer the veggies to a shallow ovenproof dish and scatter with cubed cheese.
  4. Cover the vegetable and cheese mixture with the sliced potato, brush with the melted butter, season and bake at 190ºC (Gm 5) for 30-40 mins until golden brown on top and the potato is cooked.


2 tbsp oil

1 onion, sliced and diced

1 red pepper, diced

1 carrot or small sweet potato

100g green beans

1 tin baked beans

1 tin sweetcorn

1 tbsp tomato puree

1 tsp BBQ seasoning or paprika

100g cheese, cubed

500g potatoes, sliced thinly

1 tbsp melted butter

salt & pepper
