Chicken meatballs
Method
1. Heat the oven to 200C/180C fan/gas 6
2. Chop the celery, carrot, chicken and chives into very small chunks (or blitz in a food processor – you may need to use a spatula to scrape the sides of the bowl a few times if you do).
3. Make sure all the ingredients are well combined.
4. Shape into small meatballs using your hands.
5. To cook, put the meatballs on a baking tray lined with greased foil and bake for 10 mins or until browned and cooked through.
6. Served with rice and vegetables for a tasty meal.
Ingredients
½ celery stick, cut into small chunks
1 Carrot, cut into small chunks
400g boneless skinless chicken thighs, cut into chunks
a few chives, snipped
oil, for greasing
