Banana Bread


  1. Mix together the first 3 ingredients: sugar, oil and egg.
  2. Add in the next 3: mashed banana, vanilla essence and salt.
  3. Sieve in the flour and bicarbonate of soda, then combine.
  4. Finally add in the currants and nuts (if using).
  5. Bake at 180°C in a greased loaf tin for 35/40 mins, or until skewer comes out clean.


100g sugar

3 tbsp sunflower oil

1 egg, beaten

2 ripe bananas, mashed

dash of vanilla essence

pinch of salt

200g self-raising flour

¼ tsp bicarbonate of soda

100g currants

100g walnuts (optional)
