Banana Bread
Method
- Mix together the first 3 ingredients: sugar, oil and egg.
- Add in the next 3: mashed banana, vanilla essence and salt.
- Sieve in the flour and bicarbonate of soda, then combine.
- Finally add in the currants and nuts (if using).
- Bake at 180°C in a greased loaf tin for 35/40 mins, or until skewer comes out clean.

100g sugar
3 tbsp sunflower oil
1 egg, beaten
2 ripe bananas, mashed
dash of vanilla essence
pinch of salt
200g self-raising flour
¼ tsp bicarbonate of soda
100g currants
100g walnuts (optional)
