Anything Pasta Bake

Method


  1. Heat the oil in a saucepan on a low heat.
  2. Peel & chop onion (or leek) add to oil with a pinch of salt & pepper & fry gently in the pan for 10 mins with a lid on.
  3. Add in the chopped garlic and your choice of herbs, cooking for another couple of mins.
  4. Prep your mixed veg by chopping into small pieces.
  5. Add to lidded pan, season again & cook until veg is tender (5-8 mins).
  6. While veg is cooking, make the pasta per packet instructions.
  7. Once veg is tender, tip in the tomatoes, replace lid and simmer for a further 10 mins.
  8. Tip the cooked pasta into a deep, ovenproof dish and pour the veg mix over.
  9. Roughly chop, then add the already cooked protein (if using).
  10. Grate, crumble or tear the cheese, scatter over the top and bake for 20 mins until golden and bubbling.

Ingredients

1 tbsp oil

1 onion or leek

salt & pepper

2 garlic cloves (optional)

600-800g mixed veg eg. broccoli, peppers, cabbage etc.

1 tsp dried herbs

2 x 400g tins of tomatoes

300g any pasta

protein (optional): 150-200g leftover roast chicken, ham or tin of tuna
